MARINATED BARBECUED CHICKEN
Try this delicious meal with a good glass of wine!
Preparation: Less than 30 minutes
Cooking: Less than 1 hour
RECIPE INGREDIENTS
- 2 garlic cloves
- ½ cup (125ml) oil
- 2 tbsp. (30ml) White or wine vinegar
- 2 tsp. (10ml) salt
- Dash pepper
- 2 tsp. (10ml) paprika
- 2 tsp. (10ml) dry mustard
- ½ tsp. (2ml) chili powder
- 5-6 lbs. (2-2.4kg) chicken, cut into 8 pieces
RECIPE INSTRUCTIONS
Drop garlic through feed tube of food processor while machine is running. Process until minced. Add oil, vinegar and seasonings. Process until blended.
Pour marinade over chicken pieces. Rub well to coat on all sides. Let marinade sit at room temperature for 1 hour, or overnight in refrigerator. Pat chicken pieces dry with paper towel.
Place on barbecue far away from hot coals. Cook chicken for 35-45 minutes, turning often to prevent scorching.
Serves 8. May be frozen. Delicious; goes well with potato salad.
